How to Turn “Bad” Apples into “Heavenly”

GF Cinnamon Apple Cake
GF Cinnamon Apple Cake

So………..the apples were just getting spotty and mushy but still tasted amazing!  Here is what I did to use them and make a nice natural dessert.  It turned out very moist and yummy.

Cinnamon Apple Cake (GF)

2 1/2 cups diced apples
1 1/2 cups GF flour mix
3/4 cup sugar
1/2 cup vegetable oil
2 eggs, beaten
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt

Directions:

Preheat oven to 350 degrees F.
Lightly grease an 8-inch round cake pan. Combine all ingredients in a large bowl: whisk until lightly mixed. Pour into prepared cake pan and bake until a toothpick inserted in the middle comes out clean, about 30 minutes. Remove from oven and cool 15 minutes: remove from cake pan and cool completely.

Summer has come to a beautiful end.  We (DoughChicks) had a fabulous time with the three farmers’ markets that we participated in this season:  Texas Township Farmers’ Market on Tuesdays, South Haven Farmers’ Market on Wednesdays, and Marshall Area Farmers’ Market on Saturdays.

Now we move on and prepare for the fall and winter markets.  We love the changing seasons and along with that, the change in markets.

Marshall Area Farmers’ Market  is now a year round market.  The indoor one starts November 9 at Oaklawn Hospital from 9:00AM-2:00PM the second, third and fourth Wednesdays of every month.  The first Wednesday of the month will run from 3:00PM-8:00PM starting December 7!  Make a note of this unique time.  We will be there!

Bronson Hospital Indoor Market will be on Tuesdays from 10:30AM-2:00PM starting December 6!  Stop by and see us!
