So………..the apples were just getting spotty and mushy but still tasted amazing! Here is what I did to use them and make a nice natural dessert. It turned out very moist and yummy.
Cinnamon Apple Cake (GF)
2 1/2 cups diced apples
1 1/2 cups GF flour mix
3/4 cup sugar
1/2 cup vegetable oil
2 eggs, beaten
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
Preheat oven to 350 degrees F.
Lightly grease an 8-inch round cake pan. Combine all ingredients in a large bowl: whisk until lightly mixed. Pour into prepared cake pan and bake until a toothpick inserted in the middle comes out clean, about 30 minutes. Remove from oven and cool 15 minutes: remove from cake pan and cool completely.

Come and visit us! We’ll have Chia Crunch, MidNight Crunch, KaraComets, Two Mittens Pancake/Waffle Mix, and an assortment of our gluten-free cookies, biscotti and muffins available. Occasionally, we’ll have Bailey’s Chocolate Cupcakes. They are gluten-free and are so rich and moist, not grainy and tasteless, like other gluten-free cupcakes.
